I’m baaaack. Took a hiatus to focus a little bit on my powerlifting training while brainstorming a little overhaul for this site. I will start posting again while working on a little makeover for this site. 🙂
Meanwhile, I have been religiously prepping every week still, and will start sharing my new ideas here again. This is what I came up with this week – Curried Chicken Salad with shredded chicken (made in the Instant Pot), celery, and grapes mixed with a dressing with greek yogurt, lemon, and seasoning. At the very end I dressed it up with some toasted nuts and green onion. A versatile salad that can be eating in sandwiches, on top of salad, and in lettuce wraps!
