I thought this was going to be the week I would be back on track to getting these posts up by Monday or Tuesday… but I spent a lot of time thinking about what I was going to write this time.. and decided to write two posts.
Anyway, onto the food.. this is this week’s meal prep: Broiled tilapia with a side of Cauliflower mash and sauteed zucchini. The cauliflower mash is this recipe from Nom Nom Paleo and it is my favorite. The only things I did differently was that I steamed the cauliflower in the Instant Pot (2 minutes on the steam function) and I didn’t bother with the food processor – just mixed it all together with a whisk.
For the zucchini – I spiralized a bunch of zucchini, cooked it with onions and garlic, seasoned with salt and pepper and garnished with some cilantro. I sauteed it in some szechuan chili oil so that’s where most of the flavor came from.
Tilapia – I brushed the top of the tilapia with some olive oil, sprinkled some all purpose seasoning on top, and broiled it for about 9 minutes. It came out perfectly with no dryness. Then I squeezed some lemon over.
