2016 so far has been the year of the easy, low hassle meal preps. I’m combining two weeks into one post here, but will follow up with another post on how my meal prepping will look like in the next few weeks to fit my current goals.
For the week of 1/11/2016 – 1/15/2016 I actually prepped twice… I had lunch provided for me for one day, and then made a seared ahi salad for half the week and then some mahi mahi with stir fried vegetables for the second half of the week.
Seared Ahi Salad
I seared an ahi steak for 1:30 on each side and then let it cool. Once it was cool, I cut it in cubes and drizzled some soy sauce, sesame oil, and lime juice. Garnished with green onions and sesame seeds.
For the mahi, I just sprinkled some all purpose seasoning on the top and then cooked it on my cast iron grill pan for 5 minutes on the first side, and then 4 minutes on the skin side. Squeezed some lemon over and packed it with some stir fried veggies.
For the week of 1/18/2016-1/22/2016, I continued the stir fried veggie theme… but this time I paired it with some curry turkey burgers that I basically made up on the spot. This was a little procrastinated prep done at 11PM at night so I did not take any pictures other than this one action shot. But here is how I made the patties, and I’m happy with how they turned out!
Curry Turkey Patties
- 1.5 lb lean ground turkey
- 1 – 1.5 tsp curry powder
- 0.5 tsp garam masala
- 1 tsp grated ginger
- 3 cloves minced garlic
- chopped scallions
- 1 tsp salt (might reduce to 0.5 next time)
- black pepper
Mixed everything together, formed patties, and cooked it on the stove til they were cooked all the way through. That’s it! 🙂
