First meal prep of 2016! Sprout’s had some grass fed ground beef on sale so I decided to use that as my protein for the week. I ended up drawing inspiration from past meals for this week’s meal prep. For the meat/veggies, I used the ground beef recipe here but added some mushrooms and zucchini. I cooked those first before cooking the meat, and then mixed it all together for the last couple minutes of cooking.
I then made some brown rice, added some pickled veggies I had on hand and called it lunch for the week!
