Here we go…. meal prep, post vacation style. I ate quite well on vacation and loved all the food but after all the indulging, all I wanted was some basic lean protein and lots of veggies. Thankfully, that combination makes for a pretty easy food prep so after a trip to Costco where I found some dover sole at a really great price… I decided on some sole, green beans, and sweet potatoes. I actually ended up going a little crazy at Costco so my prep also included shredding and spiralizing zucchini (useful to add volume to meals or for “noodles”) and chopping up various veggies for easy use during the week. Here is a peek at what groceries/start of prepping looked like this week…
For the Dover Sole, I seasoned it with some all purpose seasoning (lazy but worked great!), some crushed red pepper, a squeeze of lemon, and some lemon slices on top. Put it in the oven at 375 degrees F for about 10 minutes.
At the same time, I roasted the sweet potatoes (seasoned with just a little salt and garlic powder) and left it in there for about 35-40 min.
For the green beans, to make sure it stays crunchy I first blanched them. I brought some water to a boil and added some salt. Turned off the heat, added green beans, and let it sit for about 4 min. Drained them and then crisped them up in a pan with some garlic and a little oil for a few minutes. Here is how it looked, just before consuming:
