10 minute Mexico inspired dinner. It is true that this plate did only take 10 minutes to put together, but it was because I had some components on the plate already prepared. I had made a big batch of mexican rice earlier in the week, already had lettuce cut and washed, and the guacamole was one of these 100 calorie Wholly Guacamole packs [currently on sale at Costco in my area!]. I LOVE making my own guac and prefer the taste of fresh homemade guac but I can never finish it all without it going bad first, so these are perfect. For the tilapia, all I did was coat each side with the BBQ rub in my previous post, sprinkled some additional salt (to bring out more flavor!) and cook on the stove for 4 minutes on each side. Squeezed a little lime, and I was ready to eat!
For the mexican rice, I followed the recipe I linked exactly with the following modification: I used an Instant Pot pressure cooker and it worked GREAT. I rinsed the rice and sauteed everything right in the pot (I actually reduced the amount of oil as well). I reduced the amount of broth by a half a cup (so just 1.5 cups) and I cooked in High Pressure for 6 minutes and let the pressure come down naturally. Best mexican I’ve ever made and arguably the best I’ve had besides the rice in Mexico.
Earlier this week, I had dressed up the tilapia a little differently and I plan to share that on a different day, as it is another great quick dinner to put together (and the leftovers taste even better!). But this was a very satisfying dinner I pulled together in 10 minutes that I wanted to share.
